Dressing under Roasted Cabbage

Dressing under Roasted Cabbage
Cabbage Ingredients
1 head of a large green cabbage cut into square bite size pieces
Salt and pepper
Olive oil
Dressing Ingredients
¾ cup ricotta cheese
Zest of 1 lemon
Juice of 1/2 lemon
Salt
Pepper
Instructions
To make the cabbage: In a 400-degree oven place the cabbage spread evenly and loosely on a cookie sheet tossed lightly in extra virgin olive oil, salt and pepper. Roast until the cabbage crisps up on the edges and slightly browns about 25 minutes.
To make the dressing: blend all ingredients in a food processor
Spread the dressing onto a plate. Let the cabbage cool slightly and then place it on top of the dressing.
